Super Special Anniversary Party Cake Recipe
A cake that is big enough and perfect to be served in an anniversary party. The cake is loaded up with strawberries, white chocolate, meringues, and many more delicious ingredients. So without any delay, let’s get started with the cake recipe.
Ingredients

300 gm salted butter, at room temperature

300 gm self-raising flour

6 medium eggs, lightly beaten

300 gm golden caster sugar

1 tbsp vanilla bean paste
To Assemble

900 ml double cream

2 tsp vanilla bean paste

1 heaped tbsp icing sugar

1kg strawberries, chopped into even slices for neat layers (8 slices for decoration)

300 gm best quality or homemade strawberry jam

Meringue kisses, chocolate bark and chocolate coated strawberries

Shortbread biscuits (or use shop-bought biscuits)

Pack of gold leaf (optional)

Heat the oven to 180 degrees C. Oil and line two 23 cm cake baking containers with parchment paper. Beat the sugar, butter, and vanilla with a hand blender until the blend is light, pale and soft.

Slowly blend in the beaten eggs, scratching down the side of the bowl after every addition, until completely mixed. If utilizing a blender, on slow speed, include the flour until well mixed and don’t over-beat as it can make the sponge hefty.

Distribute the blend equally between the cake containers and bake in the oven for 30 minutes or a toothpick inserted in the center comes out clean. Let the cake cool for 5 minutes and then turn it onto a wire rack to cool totally.

Now assemble the cake. Before you split the sponges, trim the domed tops off each cake with a blade or knife. Utilize a similar blade divide each sponge on a level plane. So now you’re left with four sponge layers.

Whip the double cream with the icing sugar and vanilla until light and feathery, and simply holding shape. Put the base layer on a turntable. Spread with a layer of jam and then channel out a decent layer of cream. Decorate by making an even layer of strawberries perfectly round the edge, and place some more fruits in the center. Repeat the same with two more cake layers.

For the top layer, place the sponge and jam, and delicately ice the cream. Now press gold leaf onto the chocolate on the strawberries, some of the bark, and a couple of meringues.

Decorate the chocolate-covered strawberries on the top of the smooth sponge, and add in shards of bark, biscuit, and meringue. Now finish the decoration by sprinkling crushed meringue and adding a few more strawberries if you want. Serve the cake and eat it on the same day.
