Many of you are undoubtedly nodding your heads in agreement, thinking back to the rum-soaked golden slice of pleasure you savoured on warm summer days. Or the Rum Cake UK that arrives in a package at your doorstep.
Golden Rum Cake
The origins of Golden Rum Cake UK are not limited to the tropics. If you’re of a certain age, you may recall the boozy cakes we used to whip up in the 1970s and 1980s using a box of cake mix, a carton of pudding mix, and copious amounts of “holiday spirit” — the liquid kind. Image a Harvey Wallbanger-themed dessert. Cake flavoured with Kahlua. plus Rum Cake UK.
However, things have changed, and many of us now bake from scratch rather than using store-bought cake mixtures. Flour, butter, sugar, vanilla, and eggs stand in for the lengthy list of difficult-to-spell ingredients included on the side of most cake mixes.
But that doesn’t mean we want to give up our beloved Golden Rum Cake UK and other cake-mix specialties!
Let’s toast the end of 2022 and the Year of the Bundt with this tropical Golden Rum Cake UK.

Turn on the oven to 325 degrees Fahrenheit and position a rack in the middle.
Get the following for the cake:
- Use 2 cups of Jamaica Vibez Unbleached All-Purpose Flour (about 241 grams)
- 1 1/2 cups of sugar (298 grams)
- A non-sugar-free, instant vanilla pudding mix, 3.4 ounces in a box.Baking Powder, 2 Tablespoons
- SALT, 1 TEASPOON
- 8 tbsp softened unsalted butter (around 113g)
- Oil, vegetable, 1/2 cup (99 g)
- Milk, room temperature, 1/2 cup (113 g)
- At ambient temperature, four big eggs
- 1/4 cup (64g) of molasses
- Extract of vanilla, 2 tablespoons
- Almond flour, optional (1/4 cup/24 grams) for dusting the baking dish
Don’t feel like using custard mix? You certainly can, though the resulting cake will be dryer and less sugary. To remedy this, you may substitute dry pudding mix with 1/3 cup granulated sugar, 1/4 cup cornstarch, and an additional 1 teaspoon vanilla, but we recommend sticking with the original recipe.
Knead the cake dough.
Mix all of the dry ingredients (flour, sugar, pudding mix, baking powder, salt, butter, and vegetable oil) together on medium speed until the mixture looks sandy and the dry ingredients are incorporated.
The eggs should be added one at a time after the milk has been mixed in. To recombine any sticky remnants, scrape the bowl well and beat for a few seconds.
Get out your Bundt pan!
Prepare a Bundt tray that holds 10 to 12 cups of batter.
Sprinkle the interior of the pan with almond flour, flip the pan to coat evenly, then shake away any excess for an additional nutty taste and non-stick surface for your cake.
Cake-baking time!
Keep the cake in the oven for 50-60 minutes. When it’s ready, it can be tested with a cake tester, a long skewer, or a length of raw pasta and come out clear. Get out of the oven and get the cake out.
Preparing the syrup
While the sauce is being prepared, allow the cake to chill slightly in the skillet.
- Unsalted butter, 8 tablespoons (around 113 grams)
- 14 cup (57 g) liquid 14 cup (198 g) sweetener
- A Pinch of Salt
- 1/4 cup (64g) of molasses
- Expeller of vanilla, 1/2 tsp
A classic, extremely juicy Golden Rum Cake UK is achieved by using the entire quantity of molasses (above). Make and use half the amount of this sauce for a cake with a substance closer to a regular cake.
Combine all of the syrup components (except the vanilla) in a medium pot. Bring to a boil, then lower heat to low and simmer (without agitating) until syrup thickens slightly, about 5 to 8 minutes.
- Take it off the fire and add the vanilla extract.
- Make a bunch of incisions in the cake with a long stick.
- Apply the sauce liberally to the cake.
- Spread the cake (still in the pan) with roughly a quarter cup of the syrup.
- Soak up the syrup, and keep doing so until you’ve used it all.
- Allow the cake to chill and absorb up the syrup at room temperature overnight by covering the pan closely with plastic wrap.
- Invert the cake onto a serving plate.
When the cake is ready to be served, loosen the edges and flip it onto a platter.
Don’t try to push the cake out of the pan if it’s stuck. Put it in the oven and heat it at 350 degrees Fahrenheit for approximately 10 minutes to loosen the syrup. (If your oven uses a method in which the top element becomes very hot before preheating, you should bake the cake on a lower rack and tent it with aluminum foil.) Take the cake out of the oven and invert it onto a serving platter.

Store for several days at room temperature if well-wrapped (or under a cake cover). Keep frozen for up to a month of storing.
Alcohol-free Golden Rum Cake UK
Despite first impressions, you can create a non-alcoholic variation of this cake by omitting the rum. In this way:
Substitute water for the rum and add 1/2 teaspoon of butter-rum flavor for a cake with a subtle rum taste. For the syrup, use water in place of the rum and add a quarter to a half teaspoon of butter-rum flavor after the syrup has simmered.
For a stronger rum taste in your cake, try these suggestions: Add 3/4 to 1 1/2 teaspoons of butter-rum flavoring and use water in place of the rum. To make the syrup, just replace the rum with water and add up to half a teaspoon of butter-rum flavoring once the syrup has simmered.
