3 Healthy Finger Food Recipes for on the go | Q Academy | Victoria BC
Do you always feel like you are on the go? Does your life seem so busy lately that you cannot find time to eat? In these circumstances, when we finally do get a chance to eat, we tend to go for something quick and easy-which usually does not mean healthy! I have been there, I think we all have. It can be hard to find a way to stay healthy while always on the go, but it is possible!
Here are some of my favorite recipes for finger food while on the go.
Fresh Spring rolls
This recipe is super easy, and a perfect snack to have on the go. I suggest finding a good and healthy dipping sauce, but you can make your own as well.
Ingredients:
- rice paper rolls
- carrot
- cucumber
- zucchini
- spinach
- fresh cilantro, parsley or even mint
- avocado
- shredded pulled chicken or prawns (optional)
Dip:
- 1/4 cup peanut butter
- 1/4 cup water
- 2 tbsp tamari or braggs seasoning
- 2 tbsp lime juice
- 2 garlic cloves, minced and crushed
- 2 tbsp rice vinegar
Cook everything over low-medium heat, just to combine until it is smooth and creamy. You can add a pinch of cayenne for a kick if you love the heat!
Directions:
Slice everything into long matchstick sized pieces. Simply put the rice paper rolls into water for about 2 seconds and place carefully on a plate, making sure there are no wrinkles or folds. Arrange the veggies in the center of the roll, squeeze in the sides of the roll, folding them both towards the center, then finally roll from the bottom towards the top, being careful not to break open the roll. Taa-daa, that’s IT, enjoy!!
Sweet Potato fries
These are on everyone’s favorite snack list, how could you not love healthy fries??
Ingredients:
- 1-2 large yams, cut into thick matchstick size pieces.
- olive or melted coconut oil
- seasonings. I love chipotle, cayenne, cumin, garlic and salt and pepper.
Directions:
Put the Sweet Potatoes into a large bowl, sprinkle oil over them just to coat them, then add the spices. Toss until it is all coated, then arrange evenly on a baking sheet lined with parchment paper. Bake at 450 for about 20-25 mins or until getting brown and crispy.
Coconut curry Chicken Strips
These are my FAV! Everyone that tastes them, begs me for my recipe and now YOU get it too
Ingredients:
- Chicken fillets cut into 3 long pieces
- Egg whisked with egg whites
- 1.5 cups unsweetened shredded coconut
- ¼ cup ground flax seed
- 1-2 tbsp yellow curry powder
- Dash cayenne
Directions:
Preheat oven to 350 degrees. Line a baking tray with foil or parchment paper. Mix coconut, spices and flax on a large plate. Dunk chicken into egg mixture then roll in coconut mixture and set on tray. Bake in oven at 350 for approx. 20 minutes, until cooked in the center. ENJOY!
