5 Healthy lunch ideas
A lunch box is a perfect opportunity to pack something healthy that will be enjoyed. If you’re new to the idea of bringing your lunch ideas you might be put off by the time and the effort that it takes to put together something healthy.
While the prep time and effort may seem like a challenge at first, here are a few healthy lunch ideas that taste great:
Beans and hummus
This is one of the most healthy lunch ideas as it includes two of the healthiest foods: legumes and hummus. A legume is a member of the pea, lentil, bean, and peanut family of plants. A source of protein, the protein content of legumes can vary from 20% to 40%
Hummus is a tasty, healthy dip, that provides a complete protein. It has a healthy unsaturated fat content, low saturated fat content, and the perfect ratio of fat:carbohydrate: protein. Hummus is also a source of iron and zinc.
Soup and vegetables
This lunch option is perfect for warm days. As the name suggests it contains vegetables and you can add fresh herbs and spices to increase its flavor and add more nutrients.
The vegetable options vary, so you can use whatever you prefer: beans and rice, lentils, lentils, chickpeas, and a bean and legume mix.
Tofu in sauce
This is one of our favorite lunch options, as it is quick, healthy, and delicious! Tofu, or soybean curd, is very versatile and can be used in a variety of dishes from sandwiches and salads to curries and pasta dishes. Tofu can also be made into a sauce or used as a binder in a vegetarian meat-like meatball or hamburger, but it can also be used in place of meat as part of a meat-free dish.
To make tofu in sauce, you need to prepare a soy sauce paste, to help thicken the sauce and to add flavor. Mix the soy sauce paste, water, cornflour, and garlic. Cook the sauce until it becomes thick, then mix it with the tofu and serve.
This is the perfect healthy lunch option when you are short on time, as you will not have to stand by the stove to cook, and you can serve the tofu in the sauce the same day, even if you make it ahead of time.
Vegan muesli
A healthy and delicious option for those who are trying to live a vegan or vegetarian lifestyle. This healthy lunch is perfect for busy days as you can make a batch of it ahead of time, and then have a cold breakfast or lunch the next day!
Here you can choose between a traditional muesli, which includes wheat but does not include gluten, or a gluten-free muesli, which does not include wheat. This is because not everyone is allergic to wheat.
This healthy lunch option includes a mix of oats, almonds, coconut, dried fruit, and coconut oil.
For the gluten-free muesli, substitute gluten-free oats for the regular oats, and use gluten-free dried fruit instead of wheat-based dried fruit. You can add additional granola or raisins and use extra coconut oil to give it a more spreadable consistency.
Chicken wraps
These chicken wraps are perfect for busy days, as they are easy to make and serve. They can be made ahead of time and frozen, so you can simply defrost them when you need them.
To prepare this healthy lunch option you just need to cook and serve a can of chicken, and then wrap up the chicken in a tortilla, ready to serve. You can also add lettuce and salad dressing.
If you do not like the combination of cheese and chicken, you can prepare your wraps. You just need to mix a can of chicken with cheese and roll it up.
